Baked Potato Soup
4 large baked potatoes
6 c. milk
2/3 c. butter
2/3 c. flour
1 c. sour cream 3/4 tsp. salt
1/4 tsp. white pepper1 c. shredded cheese
1 c. chopped onion (cooked in bacon drippings)
10 bacon strips (cooked and crumbled)
Bake potatoes and cut up to bite size pieces. Cook bacon and crumble up. Keep bacon grease in pan and cook the chopped onion in it, then drain grease. Make white sauce with butter, flour, and slowly add milk while bringing it to a boil until it is thick. Add salt and pepper while stirring. Remove from heat, whisk in sour cream and cheese. Add the potatoes, bacon, and onion. Can keep warm on low heat or in crock pot.
I had to ask my Mom about the white sauce, because I didn't know how to do that. It is easier than it seems. If you are like me, here is what you need to do: melt the butter over med. heat in a saucepan then add all the flour to it. (It will kind of ball up.) Add the milk to it slowly while stirring until it begins to boil and thicken. It may take some time to boil.
